No Bake Chocolate Almond Protein Bars

You know that mid-afternoon moment when you're hungry, tired, and trying not to reach for something sugary?


These no-bake chocolate almond protein bars were made for that exact moment.


They’re high in protein and fiber to keep you full, support blood sugar, and satisfy your sweet tooth—without the crash.


They're easy to make, easy to digest, and perfect for my clients managing bloating, fatigue, or weight loss (Bonus: no oven required.)


This is one of my go-to options for a functional, feel-good snack—because feeling better shouldn’t mean skipping dessert.

9 Ingredients | Prep time: 15 min | 8 servings



Ingredients:

1/2 cup Almond Butter (smooth and drippy)

2 tbsps Coconut Oil

2 1/2 tbsps Maple Syrup

1 tsp Vanilla Extract

1/2 cup Vanilla Protein Powder (or chocolate)

1 cup Oats

2 tbsps Chia Seeds

1/3 cup Unsweetened Shredded Coconut

2 tbsps Dark Chocolate Chips


Directions:

  1. Line the pan with parchment paper.

  2. Add the almond butter, coconut oil, and maple syrup to a small saucepan. Heat over low, stirring with a spatula until smooth and well combined. Remove from heat and stir in the vanilla. Transfer to a large bowl.

  3. To the same bowl, add the protein powder, oats, chia seeds, chocolate chips and shredded coconut. Stir well to combine. Transfer the mixture to the prepared pan.

  4. Place in the fridge to set for one hour. Remove the bars from the pan and slice. Enjoy!
