Baked Salmon with Avocado & Feta Cheese

Salmon Ingredients

  • 2 wild caught salmon fillets (about 4 ounces each)

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1/2 tsp fresh dill, chopped

  • S&P to taste

  • Paprika to taste


Topping Ingredients:

  • 1 small to medium avocado

  • 1/3 cup feta cheese

  • 1 tbsp fresh dill, chopped

  • 1 tbsp fresh chives, sliced

  • 1/4 of a lemon juiced (may need to adjust to liking)

  • S&P to taste


Directions:

  1. Preheat the oven to 400 degrees and prep a baking sheet with a tin foil boat for each salmon fillet.

  2. Prepare the salmon: place the fillets in their tin foil boat, in a small bowl, whisk the OO, lemon and dill together and brush mixture over each fillet. Season each fillet with S&P and Paprika to taste.

  3. Bake for 15-20 minutes or until cooked through and flakes easily.

  4. While it is baking, make the topping by chopping the avocado into small pieces and mixing with crumbled feta, dill, chives, and lemon.

  5. Once the salmon is cooked, top it off and ENJOY!!!
