Chickpea Cookie "Blondie"

Ingredients:

  • 2 cans Chickpeas (drained and rinsed)

  • 1 cup Quick Oats

  • 1/4 cup Unsweetened Applesauce

  • 2 tbsps Coconut Oil

  • 2 tsps Vanilla Extract

  • 1/2 tsp Baking Soda

  • 2 tsps Baking Powder

  • 1/2 cup Stevia Powder

  • 3/4 cup Dark Chocolate Chips


Directions:

  1. Pre-heat oven to 350 degrees.

  2. First Blend quick oats into a fine powder

  3. Blend everything (except the chips) very well in a food processor (not a blender)

  4. Add “blend” to bowl to mix by hand (you want to see a moist and sticky looking mix)

  5. Add in chocolate chips, and pour into a greased pan (grease with coconut oil on a cloth)

  6. Cook at 350 for around 35 – 40 minutes. Let stand at least 10 minutes before removing from the pan. Cooling helps them from crumbling.

  7. Turn upside down on a cutting board (allowing to cool).

  8. When room temperature, slice into 16 squares!
